After many years waiting, we finally got the chance to extend Discovery Bay with a cocktail bar. Expanding the restaurant into next door we have created a stylish and comfortable bar area for diners to relax with a drink before or after their meal, to call in for drink after work, or on a night out with friends.
Alongside the usual beverages, our cocktails are created by highly skilled cocktail makers Scott and Joey, and are a mixture of modern classics, rum pearls, sparkling and Caribbean influenced options.
After years of planning, research and sample perfecting we have finally launched our range of Caribbean influenced pies, sauces, chutneys and rubs. Branded with the brand new Barrington’s Foods identity, these products will be available for you to buy from your local retailer.
Included in the range are the new Curry Chicken Pie and our infamous and totally unique Jerk Pork Pie, which some of you may already have seen and tasted at the restaurant. Response to the sauces and the Jerk Pork Pie in particular has been extremely positive, and we are expecting these products to go far.
Barrington’s Foods is the culmination of all I have learned over the years. Using what I have picked up from my mother, from running the restaurant, and from working with great chefs like Gary Rhodes and the others, I have been able to produce my own range of Caribbean food products that everyone can enjoy at home.
I’ve put my heart, soul and passion into Barrington’s Foods, I really hope you like it!
Discovery Bay Restaurant have won the Eaton Smith Solicitors and Mid Yorkshire Chamber of Commerce Business of the Month for the second time having won it previously back in 2008.

We cooked our signature dish of Jerk Cod Fillet on a Bed of Savoy Cabbage and Pancetta in the audition round, working our way up to the semi finals where we showcased the amazing flavours of the Caribbean in our specially created menu.

Pan-fried red snapper with spicy callaloo and coconut soup
Fillet steak served with spiced dauphinoise potatoes and a dark rum cream sauce
Fillet of halibut on a bed of sautéed yam served with a Creole sauce, finished off with truffle oil

Discovery Bay appeared in the Americas section for Gordon Ramsey’s F-Word 2010. From a shortlist of 10,000 restaurants, we made it all the way to the top 18. An amazing experience and one one we’re extremely proud of.
The experience of taking part in this competition was amazing and a true recognition of the quality Caribbean food we serve at Discovery Bay.

The series aired in April 2009 on UKTV Food and toured eight Caribbean islands from Jamaica to Tobago revealing the region’s rich culinary and cultural tradition.
Barrington said, “This was a once-in-a-lifetime trip; as well as working with Gary Rhodes I got the chance to cook with some of the Caribbean’s top chefs and on my travels I picked up lots of new recipes which I brought back to the UK!”
